Summery Tomato Tartlets – with Saffron, Pesto and Parmesan

225 gramplain-flour
1 teaspoonsalt
130 gramunsalted-butter-chilled-and-diced
50 gramgrated-parmesan-cheese
2 table-spooncold-water
2 table-spoonsun-dried-tomato-pesto
12 numberfresh-basil-leaves
1 pinchsaffron-threads
150 mililiterdouble-cream
2 numberlarge-egg-free-range
1 numberegg-yolk
15 numberyellow-and-red-vine-cherry-tomatoes

What could be better than a glorious savory bake for your friend and kids to beat in summer.

Perfect for nibbles for friends invited for brunch, or even a summery lunch when served with a green salad.

  1. For the pasty cases, sift the flour, salt into a food processor. Add the butter and wisk together briefly until the mixture looks like fine bread crumbs
  2. Stir in the parmesan, and add in the water. Wisk in mixture briefly until the mixture comes together in a ball
  3. Tip it out on to a lightly floured surface and knead briefly until smooth. Divide it into 6 pieces.
  4. Roll out into 15 centimeter dishes and use them to line 6 lightly buttered tartlet tins. Prick the base with a fork and chill in the fridge for at least 20 minutes.
  5. Pre heat the oven to Gas Mark 6. Place the tartlet tins into the oven for 20 minutes or till the edges take a biscuit coloured
  6. Warm 2 tablespoon of tin with a pinch of safron in a microwave
  7. Beat the eggs, egg yolk and safron mixture and remaining cream in a bowl. Stir in the rest of the parmesan and salt to taste.
  8. Spoon in the tomato pesto equally into the tartlet cases. Top each case with about 3 tomatoes. Then carefully pour over some of the creamy saffron mixture without spilling it over the edges.
  9. Bake the tartlet for another 20 minutes until lightly golden.
  10. Let them cool. Garnish them with basil leaves ans serve along with a summer salad for the perfect brunch
