This everyday loaf is perfect for breakfast for spreading butter / jam or for making sandwiches. A perfect combination of chewy crust and an amazingly light and fluffy crumb, this bread is a baker’s delight!

This recipe is inspired from the master baker James Morton, The Great British bake-off finalist.

  1. In a large bowl, rub together the flour, yeast and salt, keeping the salt and yeast separate at either side of the bowl.
  2. Add the milk, butter and honey and combine into a wet dough.
  3. Use a little water if dough looks dry. Different flour soak different amount of moisture. The dough should be sticky.
  4. Knead the dough on lightly floured surface for 10-15 minutes or until it looks smooth and springs back when poked with finger.
  5. Sprinkle some olive oil in the bowl and keep the dough in, making sure all the sides are coated with oil.
  6. Cover with cling film and rest for 1-1 1/2 hours or until doubled in size. You can also rest the dough in the fridge, for better flavour, for 8-10 hours.
  7. Once rested, turn the dough out on to a lightly floured surface. Cut the dough into two if you want to bake 2 smaller loaves.
  8. Shape the dough by joining all the sides in inward direction and making a seam.
  9. Keep the dough into greased loaf tin and proof for further 1 hour.
  10. Preheat the oven to 240 degrees C/ 220 C fan-assisted/ gas 9 for about 30 minutes. Keep a baking tray at the bottom while preheating.
  11. Bake the loaf for approximately 30-35 minutes or until golden brown on the top. Add a cup of water on the hot baking tray to create steam at the beginning of the baking for extra lightness and better crust.
  12. Once baked, take the bread out of the loaf tin and tap the bottom. If it sound hollow then it's done. If not, bake for further 5 minutes or until required
  13. Cool it completely before slicing.
