110 gramsoftened-butter
110 gramcaster-sugar
110 gramsoft-light-brown-sugar
1 numberegg
2 table-spooncold-water
1 teaspoonvanilla-extract
250 gramporridge-oats
110 gramself-raising-flour-2
1 teaspoonsalt
110 gramchocolate-chips-or-raisins

Chewy, oaty, chocolate chip cookies – is there anything better with a nice cup of tea?  I make these a lot for my kids and I’m lucky if they last the day.  Savages!

  1. Preheat the oven to 180C/350F/Gas Mark 4
  2. Cream the butter in a large bowl or in an electric food mixer or use a hand held mixer until soft.
  3. Add the sugars and beat until the mixture is light and fluffy.
  4. Ad the egg, water and vanilla extract while still beating.
  5. Reduce the speed and gently mix in the oats, flour, salt and raisin to form a dough.
  6. Using your hands, roll the dough into walnut-sized balls and place spaced slightly apart on 2 baking trays. No need to grease or line. I find if I wet my hands slightly, it makes it easier to shape them.
  7. Bake in the oven for 15-25 mins or until light golden brown but still slightly soft in the centre to give them that soft chew.
  8. Allow to cool on the trays for a minute before transferring to a wire rack to cool.
  9. Once cooled, store in an airtight container and they will keep for 3-5 days if you can keep light hands away from them :)
