225 gramgranulated-sugar
3 largeeggs
150 mililitersunflower-oil
1 largezest-juice-orange
225 gramself-raising-flour-2
275 gramgrated-carrot
1 table-spooncinnamon-powder
50 gramwalnut
50 gramicing-sugar-for-dusting

Carrot & Mandarin cake 🍊🍊🍊🍊 with walnuts

  1. Pre heat oven at 180 C
  2. Measure the sugar , eggs , oil , orange juice , zest and mix it all up together in a large bowl at a low speed ( we don't want too much air in the batter )
  3. Mix the cinnamon powder & the flour and add it into the batter lil at a time to ensure its lump free
  4. Finally stir in the carrots and pop the nuts into the batter and mix it up with a spatula .. No mixer to be used at this stage
  5. Take a 20cm cake tin , grease it & line it with a parchment paper & bake for about one hour and check it with a skewer .. If it comes out clean then it's ok to be removed from the oven immediately & kept on a cooling rack ... If not then bake for some more time
  6. The spiced Carrot cake is ready
  7. Dust icing sugar and if you want to make marzipan carrots u can do so
