2 cupchickpea-flour

A quintessential Bengali snack

  1. Boil and peel potatoes, mash and keep aside.
  2. Saute the ginger and garlic (Reserving a tsp for the batter) and the chopped onions, for about a minute or two.
  3. Cool and add the mashed potato mix.
  4. Add chopped green chilies, and salt to taste.
  5. Form round shaped cutlets with the palm of your hands.
  6. Prepare the batter by adding just enough water to the chickpea flour, to make a thick batter.
  7. Add the reserved ginger-garlic paste and salt, give it a good whisk to remove lumps.
  8. Dip each cutlet into the batter and deep fry in a wok of hot mustard oil, turning on each side.
  9. Once they turn golden brown, take off and serve hot.
